For crumble:

● 3.5 ounces flour

● 3.5 ounces rolled oats

● 6 tablespoons chopped fresh thyme

● 1 tablespoon coconut oil, melted

Directions:

Add all the ingredients for crumble into a bowl and mix until crumbly. Refrigerate until use.

Cook the carrots and potatoes in a pot of water until soft. Drain and add into the food processor bowl. Add rest of the ingredients except leeks and 4 tablespoons oil. Process until smooth.

Place a pan over medium heat. Add remaining oil. When the oil is heated, stir in the leeks and a bit of salt and cook until tender.

Pour the blended cheese sauce mixture and stir. Turn off the heat.

Transfer into a baking dish of about 9 x 13 inches.

Sprinkle crumble on top. Cool completely and refrigerate until use. It can last for 3 days.

To serve: Bake in a preheated oven at 375° F for about 20 minutes or until golden brown on top.
